Butter Cookies

YIELD 2 dozen cookies

INGREDIENTS
1/2 pound lightly salted butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups plus 1/4 cup flour
1/2 teaspoon baking powder
Cooking Spray
INSTRUCTIONS
Preheat oven to 350 degrees F.
With clean hands or a hand mixer, blend butter and 2/3 cup sugar in a large mixing bowl.
Add egg and vanilla, mixing with a sturdy spoon.
Add remaining dry ingredients slowly and mix until the batter forms a moist dough.
Spoon 1 teaspoon of batter at a time onto ungreased cookie sheet.
Lightly grease bottom of a small glass, dip in sugar and press on dough to lightly flatten the cookies.
Bake 15 to 20 minutes, or until edges are golden brown.
Let cool before transferring to an airtight container.
